The Kids Cook Monday with Sweet and Spicy Citrus Tilapia

Sweet and Spicy Tilapia

Happy Monday everyone!  Welcome to a new feature that I will be sharing with you every Monday.  Healthy Monday is a non-profit group based on a series of public health initiatives. 

"It’s a movement of people and organizations who commit
every Monday to the behaviors and actions that will end
preventable disease in the U.S."

Healthy Monday has a new campaign called The Kids Cook Monday where their logo is, "Start your week off right: make Monday family night!"  When I was contacted by the people from The Kids Cook Monday Campaign and I read about their program, I knew this was a perfect fit for my blog.  On their website they state the following:

"When kids pitch in making meals, they’re empowered to consider the portions, the vitamins and the nutrients of what they’re eating. And since the family that cooks together eats together, parents can check in with their children during dinner."

I believe and follow this philosophy with my own family.  And I truly feel it makes a positive difference in your child's life, health and well-being. 

My first recipe for The Kids Cook Monday segment is a light and delicious Sweet and Spicy Citrus Tilapia.  Check out the recipe details below and photos of my 2 daughters helping prepare the fish.






My daughter's Mariah & Marissa are 13 years old and they practically prepared the fish on their own.  I chopped the garlic but they measured and prepared all the other ingredients.  My one daughter, Mariah, is not a fan of seafood but she did eat a small piece of fish.  I find the more your kids help you in the kitchen, the more they will try foods that they may not like or may not think they like.

This tilapia had a slightly sweet, citrus flavor with a touch of spiciness.  But, not too spicy for younger age kids either.  It was simple to prepare and cook.  It's kid-friendly and adult-friendly as well.  Perfect for a Monday night meal to get your week started in a healthy way.

Pair this tilapia with Charred Vegetable Rice (click here for recipe) for a terrific side dish and a great way to get extra veggies.

Mom's Cooking Club Lesson:  Having your kids help in the kitchen is a great way to talk about ingredients and spices as well as teaching them cooking skills.  Note:  Keep an eye out when broiling the fish.  It took less than the 15 minutes recommended cook time and can burn easily if not watched.

Salmon Cakes

Salmon Cake

I call these Salmon Cakes, others may call them Salmon Patties.  Some may have never had them at all.  I grew up with my mom making Salmon Cakes.  I loved them when I was younger and I still do.  You use canned salmon which is an excellent pantry staple to have on hand. 

My mom's recipe is very similar to mine.  I think we probably use all the same ingredients.  My dad always (and still does) made a big production while eating his salmon cakes.  He would sprinkle some lemon juice, Worcestershire sauce and pepper on his salmon cakes sandwiched between saltines spread with mustard.  My husband did not grow up with salmon cakes so this is something I introduced him to.  He eats his with mustard and saltines. Must have gotten that idea from my dad.  I don't like to mess with all that stuff.  I like it fine just plain.  I only wish my 2 daughters would like salmon cakes so I could pass on this recipe when they get older.

Serve with yellow/brown rice, a salad or some other vegetable side dish.  Try some sauteed zucchini and yellow squash like I did above.  

Salmon Cakes
Recipe by Jamie from Mom's Cooking Club


Ingredients

1 (14.75 ounce) canned Alaska pink salmon
1 egg
1/2 cup Italian dry bread crumbs
1/4 cup onion - chopped fine (you can also substitute with chopped green onions)
1 teaspoon Dijon mustard
1/4 teaspoon garlic salt
1 teaspoon fresh lemon juice
pepper - about 1/8 teaspoon or a couple turns of a pepper mill
1 tablespoon olive oil

Directions

Drain and reserve liquid from salmon.  Mix salmon, egg, bread crumbs, onion, mustard, garlic salt, lemon juice and pepper in a small bowl.  If the mixture feels dry, add some of the reserved liquid a little at a time.  The consistency should be somewhat moist and hold it's shape but not overly wet.  I always add some liquid to the mixture.  It keeps it moist and gives it extra flavor. 

Shape into patties.  You should get about 4-5 patties with this recipe.  Heat olive oil in pan over medium to medium-high heat.  Pan fry and brown salmon cakes for a few minutes before turning over and browning other side.  Drain on paper towels if needed.

4-5 servings

Udon-Beef Noodle Bowl


I can't believe it's already August.  I know time is flying by when it's another month of the Cooking Light Virtual Supper Club.  My four other Supper Club friends want to share another great menu with you this month.  The theme for August is, "A Visit to Chinatown".  

Making Asian-style food at home always tastes so good and flavorful.  Who needs take-out when you can make these dishes at home.  I made Cooking Light's Udon-Beef Noodle Bowl.  What a satisfying and comforting meal.  Really delicious.

Note:  I used more beef than the recipe called for, a little over a pound.  I also couldn't find udon noodles in my grocery store so I used dried lo mein noodles which I found in the Asian section of my store.  Spaghetti can be substituted as well.  Season with salt and pepper to taste.

The Ultimate Comfort Food....Macaroni and Cheese

It's been a couple of weeks since I posted anything.  This summer is flying by.  I just got back from a wonderful trip to South Carolina.  My husband's brother invites us to his lake house in the summer and what a wonderful time we always have there. 

I made this Macaroni and Cheese a few weeks ago but I also made 2 casserole dishes on our trip.  Perfect when feeding a crowd and it heats up well for leftovers.  You can't go wrong with homemade Mac & Cheese.  It is simply THE ULTIMATE COMFORT FOOD! (for me anyway)

There are a trillion Macaroni and Cheese recipes.  This one comes from The Pioneer Woman Cooks.  Really good, really yummy and really satisfying.  A family and crowd pleasing dish that can be eaten as the main meal or a side dish.




My way:  The recipe calls for a pound of cheese.  I use half mild cheddar and half extra sharp white cheddar.  I put aside around a 1/4 cup of each and sprinkle on top before baking.  I also add 1/2 teaspoon of hot sauce when seasoning the mac and cheese mixture.

Mom's Cooking Club:  To change up this macaroni and cheese, try different cheeses.  You could add some pepper jack, swiss or use all extra sharp cheddar.  Use a combination of different cheeses for your own unique mac and cheese flavor.

Grilled Greek Vegetables in Foil Packet


Since many of us are grilling these days, I wanted to share a delicious and easy way to add grilled vegetables to your meal.  What could be easier than putting some sliced vegetables, seasoning and a little olive oil  sealed in a foil packet, then heated on the grill?  When done, sprinkle some feta cheese on top for a quick and healthy side dish.  Oh, and easy to clean up too!

Ingredients

2 zucchini, sliced
2-3 small yellow squash, sliced
1/2 pint cherry tomatoes
2 teaspoons olive oil
1 teaspoon Greek Seasoning ( I used Cavender's All Purpose Greek Seasoning)
Pinch of salt and pepper
1/2 cup crumbled feta cheese

Preparation

Mix zucchini, squash, tomatoes, olive oil, Greek seasoning, salt and pepper in bowl.  Place vegetable mixture on a large piece of aluminum foil.  Bring up sides of foil.  Fold top and sides to form a foil packet.  Leave some air in packet for air circulation.  

Place foil packet on grill, cover and cook for 10-15 minutes.  Place foil packet on plate/platter, open carefully and sprinkle feta cheese on top. 

I like to serve the entire foil packet on a plate at the table.

Mom's Cooking Club Lesson:  You can also make these foil packet vegetables in the oven.  Place sealed foil packet on cookie sheet and bake in 450 degree oven for about 15 minutes or until vegetables are tender.

Welcome to July's Cooking Light Virtual Supper Club.  It's an exciting month for us 5 bloggers (Jamie, Shelby, Val, Patsy and Sandi) as we celebrate our 1st year anniversary of the Cooking Light Virtual Supper Club.  This group started a year ago to share recipes from Cooking Light on a monthly basis with a specific menu theme.  Our group has changed some over the last few months with Aggie and Helene leaving and Patsy and Sandi joining.  We are still very excited to continue sharing this with our readers every month.  

We're also very excited that Cooking Light has generously provided their newest cookbook, Cooking Light, Cooking through the Seasons, for a giveaway to celebrate the 1st year of the Cooking Light Virtual Supper Club.  Thank you Cooking Light.  Before I get to the details of the giveaway, I want to share our July Menu.....Barbecue/Picnics.

Summertime is here which means it's time for all your favorite barbecue and picnic foods.  So, get out the grill and the cooler/picnic basket to enjoy the flavors of summer.

For our July gathering, I made Grilled Romaine with Blue Cheese Dressing. (click here for recipe)  When I told my family I was going to grill lettuce, they all looked at me like I had 2 heads.  I've never grilled lettuce before.  This recipe was super easy.  You can make the blue cheese dressing ahead of time and the lettuce only takes a couple of minutes on the grill.  The lettuce gets slightly wilted and it has that smokey grilled flavor.  It is a really good change to your "normal" salad and will go perfectly with any of your grilled foods.  My girls don't like Blue Cheese dressing so they used Ranch dressing instead.  The blue cheese dressing is chunky and thick.  If you like it thinner, you could add more water.

Mom's Cooking Club Lesson:  When cutting the Romaine lettuce in half lengthwise, I kept the stem end on to help the lettuce stay together on the grill.  Before serving, I just cut the end pieces off.

Greek Panzanella.....bread salad


I saw this salad recipe awhile ago from Barefoot Contessa on the Food Network.  A wonderful change from your regular salad.  My daughters said, "Where's the lettuce mom?"  We're sort of bread freaks around here so let's just say this bread salad was a huge hit.  Even though my daughters don't like all the veggies in this salad, they picked out what they liked.  I hoping if I keep giving them meals with different vegetables, they'll try it and like it.  The vinaigrette is excellent.  This has become a favorite salad for all of us.  

This salad is perfect for a cookout or a summer meal.  It's easily doubled for a crowd.  Try it out this 4th of July holiday weekend or anytime this summer.

Mom's Cooking Club Lesson:  This recipe uses a hothouse cucumber.  I used a regular cucumber.  Either one is fine.  Also, while browning the bread cubes, I added a little more olive oil for flavor and to help brown them more.
