(my favorite time of year) The 5 bloggers who make up the Cooking Light Virtual Supper Club wanted to help inspire you with some Cooking Light recipes that remind us of fall flavors.
I chose to make the main dish.....Beef Daube Provencal. A classic french braised beef, red wine and vegetable stew. This is such a hearty and comforting stew. Very rich in flavor and the beef turned out so tender. Perfect for fall and the cooler months coming up.

Mom's Cooking Club Lesson: Braising is a cooking technique in which the main ingredient is seared, or browned in fat, and then simmered in liquid on low heat in a covered pot. Braising is best done in a crock pot, pressure cooker or Dutch oven. Cooking the meat slow, moist and over low heat is how to take a less expensive, tough cut of meat and turn it into something tender and flavorful.

Now that's comfort food! I love braising meats in the cooler months, fills the house with such fabulous flavors! Nice way to start our virtual meal!
I saw that you were making Beef Daube on Val's blog and I didn't want to miss it. It's one of our all time favorites. I prepared it last winter for guests and everyone cleaned their plate.
Your photos are lovely. I found the Daube hard to photograph for my blog.

My son just started middle school and they don't let the kids eat a morning snack. Then they rush them through lunch. Ugh. Just this morning, I was dreaming up some hearty lunch ideas that he could eat quickly while packing in some good quality calories. A beef stew came to mind and then ... voila! Your blog post. I think I'll give this recipe a try. Looks delish. BTW, really loving your The Kids Cook Monday posts.
